09 Dec ICMJ webinar serves up smoking good Christmas selection
Meat lovers are in for treat with the final Intercollegiate Meat Judging Association (ICMJ) webinar of the year set to serve up a smoking good selection of Christmas treats with Butcher Wars star Shannon Walker. The webinar, to be held on Wednesday December 16 at 2pm (AEST), will feature Shannon and the team from the Black Bear BBQ chain delivering their top tips for a memorable Christmas lunch. The presentation will be hosted by Meat & Livestock Australia NLRS Market Reporting Manager, Demi Lollback, and will include a demonstration of cuts and flavours from a range of meats fresh out of the smokers.
“It’s been a long and tough year for people all around the world, so what better way to end this year’s ICMJ webinar series than by serving up some awesome flavours for everyone to enjoy this Christmas,” Mr Walker said. Now a superstar of the Meatstock Butcher Wars competitions, Mr Walker started his meat life in 1985 as an apprentice butcher, working his way up to management before branching out and buying his own shop. In 2014 he completed his TAE and Cert IV in Meat Safety, enabling him to start teaching at TAFE where he has taught Retail Butchery, Animal Welfare, Meat Inspection and Game Meat Harvesting. In his spare time Shannon organises the State Butchery Challenge and is the in-house butcher for Black Bear BBQ.
Mr Walker has been a long-time supporter of the ICMJ program and delivers training workshops on carcase breakdown and cut utilisation at the ICMJ annual conference in Wagga Wagga.
As a result of Covid-19 restrictions forcing the cancellation of its conferences and workshops, ICMJ shifted to digital delivery to ensure students and young industry professionals can continue to access meat science training and networking opportunities. The ICMJ Association is a not-for-profit organisation run by a 100% volunteer committee, funded by Meat & Livestock Australia, the Australian Meat Processing Corporation and industry sponsors, with a mission to ‘Inspire and develop future professionals in the global red meat industry’. Now in its 30th year of existence, the Australian ICMJ has a long and successful reputation of attracting graduates to careers in the red meat industry.
Previous webinars have addressed new technologies for measuring eating quality in beef and lamb, genomic tools to breed for improved eating quality, and carcase yield measurement technologies and their integration in processing plants, and carbon neutrality in the red meat sector.
